Barbeque Lingcod with Bacon Jam

Barbeque Lingcod with Bacon Jam

 

Ingredients

4 fillets Langara Island Lingcod
3 tbsp Olive oil
  BBQ Sauce (recipe below)
  Bacon Jam (recipe below)

Preparation

  • Pre-heat the oven to 400 degrees.
  • Line a baking sheet with parchment paper and brush with olive oil.
  • Pat the lingcod fillets dry with a paper towel and place on the baking sheet.
  • Generously coat the fillets with BBQ sauce and bake until fish is opaque in center, about 10 minutes.
  • Turn oven to broil and broil until the BBQ sauce on top of the fish is charred.
  • Take fish out of the oven and with a spatula, slide the lingcod onto a serving plate and top with warm bacon jam.

 

Bacon Jam

Ingredients

1/2 pound Bacon, roughly chopped
1/2 Small onion, diced
1 Garlic clove, crushed
2 tbsp Brown sugar
3 tbsp Apple cider vinegar
2 tbsp Maple syrup
1 tbsp Sambal

Preparation

  • In medium sauce pan, cook bacon over medium-high, stirring occasionally, until fat has rendered and bacon is lightly browned.
  • Transfer bacon to paper towels to drain and pour off all but 1 tablespoon of fat from the pan.
  • Add onions and garlic to fat in pan, and cook until onions are translucent.
  • Add vinegar, brown sugar, maple syrup and bring to a boil, stirring and scraping up browned bits from pan.
  • Add bacon and stir to combine and simmer on low heat until liquid is syrupy and thick.
  • Transfer to a food processor; pulse until coarsely chopped.
  • Let cool, then refrigerate in airtight containers. Will keep up to 4 weeks.
