Langara Recipes: Ceviche, 2 versions

Salmon Ceviche

Ingredients

1 lb Haida Gwaii Spring or Coho salmon, diced small
1 Small red and yellow pepper, finely diced
1 Small red onion, finely diced
2 Firm avocados, finely diced (preferably diced just prior to serving
1 cup Cilantro, chopped
1/2 cup Chives, chopped
1 tsp Cayenne pepper
3/4 cup Lime juice, fresh
1/4 cup Lemon juice, fresh
  Salt to taste

Preparation

  • Gently mix all ingredients with the exception of the avocado.
  • Chill 2 – 4 hrs.
  • Gently add avocado and serve with toast points or crackers.

Chef’s Note: Can also be used as salad topping.

 


 

Asian Style Ceviche

Ingredients

8 oz Scallops, diced
8 oz Haida Gwaii Halibut, diced
8 oz Haida Gwaii Salmon, diced
1 each Small yellow and red pepper, finely diced
1/2 cup Lemon juice, fresh
2 tbsp Wasabi paste
3/4 cup Soy sauce, low sodium  
1 tbsp Sesame oil
1 cup Cucumber, finely diced (preferably diced just prior to serving)
3 tbsp Toasted sesame seeds

Preparation

  • Gently mix all ingredients (with the exception of the cucumber and sesame seeds).
  • Chill for 2 hours.
  • Just prior to serving add cucumber and sesame seeds, and serve with toast points or crackers.
