Salmon Karaage



2 cups Vegetable oil to fry
500 g Haida Gwaii Salmon fillets, boneless, skinless and cut into 3/4 inch thick pieces
1.5 cups Soy sauce
5 Garlic cloves, thinly sliced
1 Tsp Cayenne pepper
1 cup Corn starch


  • Marinate salmon in soy, ginger, garlic, cayenne for approximately 4 hours in fridge.
  • Drain salmon.
  • Heat oil in a deep-walled sauce pot with a candy or deep-fat thermometer and bring the oil temperature between 350 and 375 degrees Celsius. Should be enough to fully cover a batch of whatever you’re frying. Always leave at least 3 inches of space at the top of your pot, to prevent oil from bubbling over when food is added.
  • In small batches, toss and completely coat salmon in cornstarch.
  • Fry the piece of salmon for 90 seconds and remove carefully out of oil with a spider or a slutter spoon.
  • Put the salmon on paper towel, preferably, to remove the excess oil.

Ready to serve.

Chef’s Note: If you have some salmon belly, this is a good way to cook it.
