Salmon Burger with 'Big Lang' Sauce

Ingredients

2 Sesame burger buns
2 Haida Gwaii Coho salmon fillets, cook following Unilateral recipe
100 ml Big Lang Burger Sauce (recipe below
  Sliced red onion, ripe tomato and pickles

Preparation

  • Prepare Big Lang Burger Sauce following recipe below.
  • Cook salmon fillets following Unilateral recipe, and place aside.
  • Lightly butter inside of burger buns and then place on grill or pan, just enough to warm the bun and get some coloration on them (I could tell you to warm up the bun in the oven, but I find this dries them up).
  • Spread Big Lang Burger Sauce on both sides of the bun, and don’t be shy -- this is what will give the special flavor to the burger.
  • Place salmon fillet on the bottom bun, top with all the fixings and close with the top bun.

Add anything you want on this burger: jalapeños, bacon, smoked cheddar. Is also great with chicken or a good homemade beef patty instead of salmon.

 

'Big Lang' Burger Sauce

Ingredients

1 Shallot, roughly chopped
1 Garlic clove, roughly chopped
2 Smoked chipotle peppers in adobo sauce (with the juice)
2 Large dill pickles
1 tbsp Ketchup
1 tbsp BBQ sauce (preferably homemade)
1/2 cup Mayonnaise

Preparation

  • Using a food processor, gently process the chipotle, shallot, garlic and pickles (mixture should have the consistency of a relish).
  • Fold the mixture along with the rest of ingredients into the mayonnaise and mix until smooth.
  • More chipotle can be added if you prefer a spicier burger.

Chef’s Note: This is good on any kind of burger -- chicken, beef, salmon -- and also a great dipping sauce for French fries.
